This has been a Thanksgiving staple for years. I love sweet potatoes, so I make these much more often than that. This recipe is from one of my mom's old cookbooks. These potatoes go wonderfully with any turkey or beef dinner.
Ingredients:
8 cups sweet potatoes or yams, peeled and diced
3 ripe bananas
6 tablespoons (3/4 stick) unsalted butter, divided
2 tablespoons rum
1 tablespoon brown sugar
1/4 teaspoon nutmeg
salt, to taste
1 cup toasted almond slivers
Preparation:
1. Place sweet potatoes in a medium saucepan and cover potatoes with water. Cook until very tender. Drain.
2. Cut bananas into 1-inch pieces and add to sweet potatoes.
3. Using a hand mixer or potato masher, mash potatoes and bananas until smooth.
4. Add in 4 tablespoons butter, rum, brown sugar, nutmeg and salt to taste. Mix well.
5. With remaining 2 tablespoons butter, saute almonds until lightly browned.
6. Top mashed sweet potatoes with almonds.
