It's been years since I made meatballs. I started with a meatball recipe from The Kichn, and customized the meat, cheese, and spices. This makes a lot of meatballs (60ish), but I vacuum seal and freeze them for future dinners. I usually make Spaghetti, but meatball subs are another go to.
Ingredients:
1 pound ground beef
1 pound ground pork
1 pound ground veal
1 1/2 cups breadcrumbs
1 1/2 cups milk
3 eggs
1 1/2 cups grated Sartori Parmesan
3/4 cup parsley, finely chopped
salt and pepper
1 teaspoon Italian seasoning
1 1/2 cups onion, very finely chopped
3 cloves garlic, minced
1 teaspoon red pepper flakes
Preparation:
1. Preheat oven to 400 degrees. Line 2 baking sheets with silpat mats or parchment paper.
2. Combine milk and breadcrumbs in a small bowl. Set adside to allow breadcrumbs to absorb milk and become soggy.
3. In a separate bowl, whisk eggs, salt, pepper, Parmesan, Italian seasoning, and parsley together.
4. Add ground meat to the egg mixture.
5. Stir in onions, garlic, and red pepper flakes.
6. Add the soaked breadcrumbs. Try not to overwork the meat.
7. Gently roll meatballs into 1 1/2 inch meatballs, about 2 tablespoons.
8. Place meatballs on a baking sheet about an inch apart.
9. Bake for 25-30 minutes.
