I was looking for a shish kabob chicken marinade and came across this great blog called Once Upon a Chef. I found lots of great recipes that I can't wait to try and put my own spin on! I love the spices in this dish. This was extremely flavorful and a great light dinner. This is great with some rice, couscous, or quinoa.
Ingredients:
1 cup plain whole milk greek yogurt
2 tablespoons olive oil
2 teaspoons paprika
1/2 teaspoon cumin
1/2 teaspoon cayenne pepper
1/2 teaspoon chili powder
1/4 teaspoon turmeric
1/8 teaspoon cinnamon
1 teaspoon crushed red pepper flakes
zest from one lemon
2 tablespoons freshly squeezed lemon juice
1 3/4 teaspoons salt
1/2 teaspoon freshly ground black pepper
5 garlic cloves, minced
2 large chicken breasts, cut into large cubes
1 large onion, cut large pieces
Preparation:
1. Combine the yogurt, olive oil, paprika, cumin, cayenne pepper, chili powder, turmeric, cinnamon, red pepper flakes, lemon zest, lemon juice, salt, pepper and garlic.
2. Submerge chicken and onion pieces in the marinade and refrigerate overnight.
3. Soak skewers in water for at least an hour prior to grilling. Slide the marinated chicken onto skewers, alternating with onion pieces.
4. Preheat the grill to medium-high heat. Grill the chicken kebabs until golden brown and cooked through, turning skewers occasionally, 10 to 15 minutes.
