My sister and my friend Sadie both are big mojito fans. A coworker gave me a bunch of cookbooks that she wanted to get rid of, and skimming Betty Crocker's The Big Book of Cookies led me to these Mojito Bars! I was immediately tempted to make them for the mojito-lovers in my life. I did not line my pan with parchment paper, telling myself that it would be fine to just spray it. I was very wrong. These are a mess to cut without lining the pan first. They are also easier to cut if you let them cool for an hour, then chill for an hour, and then cut. Learned the hard way on this one.
Ingredients:
3 tablespoons rum
16 fresh mint leaves, chopped
3/4 cup butter, softened
1/2 cup powdered sugar
2 cups flour, divided
1 teaspoon vanilla
4 eggs
1 1/2 cups sugar
1/4 teaspoon salt
2 teaspoons lime zest
2/3 cup lime juice
2-3 drops green food coloring (optional)
2 tablespoons milk
1 tablespoon powdered sugar, for garnish
Preparation:
1. Mix rum and chopped mint leaves together in a small bowl. Set aside in infuse.
2. Preheat oven to 350 degrees. Line a 13x9 pan with parchment paper.
3. Beat butter, vanilla, and 1/2 cup powdered sugar together with a mixer. Gradually add 1 3/4 cup flour until well combined.
4. Press dough into prepared pan. Bake for 22-24 minutes, until edges are slightly browning. Set aside.
5. While crust is in the oven, make the mojito layer. With the whisk attachment on the mixer, mix eggs and sugar well.
6. Add remaining 1/4 cup flour and salt. Combine well.
7. Mix in lime zest, lime juice, food coloring and milk.
8. Strain mint leaves from rum. Discard leaves. Mix rum into batter.
9. Pour batter over crust. Return to oven and bake for 25-27 minutes, until center is set.
10. Let bars cool completely, about an hour. Dust with powdered sugar. Cut into bars. Store in covered container and refrigerate.
