I am moving in a few weeks and have been trying to use up everything in my freezer. I had enough pizza dough and tomato sauce in the freezer to make 1 pizza. I wanted to try a new pizza and decided to also use up some of the andouille sausage I had in the freezer. Mustard Spinach Sausage is a family favorite dinner that I have been making for years. This pizza is incredibly flavorful and is a great weeknight dinner.
Ingredients:
1 pound Pizza Dough
1/3 cup tomato sauce
1 cup pizza cheese (mix of Mozzarella, Parmesan, Asiago, Fontina)
1 tablespoon corn meal
2 tablespoons olive oil
3/4 pound andouille sausage, cut into cubes
1/2 cup onion, diced
2 cloves garlic, diced
3 strips of bacon, cooked and diced
4 cups spinach, washed
Sauce:
2 tablespoons brown sugar
2 tablespoons apple cider vinegar
2 tablespoons Dijon mustard
1 teaspoon dried thyme
1 teaspoon pepper
1/2 teaspoon salt
Preparation:
1. Preheat oven to 500 degrees. Heat pizza stone in oven.
2. Roll dough as thinly as possible. Adding a little flour to coat the dough helps.
3. Cut sausage, onion, garlic, and bacon. Mix sauce ingredients together in a bowl.
4. Take the hot stone out of the oven. Sprinkle the cornmeal over the stone. This prevents the dough from sticking to the stone.
5. Move dough to pizza stone. Brush olive oil over dough.
5. Spread sauce evenly over dough.
6. Sprinkle onion, garlic, bacon, and sausage over sauce. Cover with pizza cheese.
7. Drizzle sauce over cheese.
8. Cover cheese layer with spinach.
9. Bake for 14-16 minutes at 500 degrees.
10. Remove stone from oven. Allow to cool for a few minutes prior to cutting.
