Whether you are looking for a Whole30 compliant mayo, or just don't happen to have any on hand, this home made version is easy with ingredients most of us already have in the pantry. You'll need a food processor and a bit of patience. This makes about 1 cup of mayo. I use this in my Apple Cole Slaw.
Ingredients:
1 egg, at room temperature
1 tablespoon white wine vinegar
1 tablespoon Dijon mustard
1 teaspoon lemon juice
1/4 teaspoon salt
1 cup oil (olive, canola, sunflower, or grapeseed)
Preparation:
1. Crack entire egg into a food processor. Process for about 20 seconds.
2. Add vinegar, mustard, lemon juice, and salt. Blend for another 20 seconds.
3. With the food processor running, very slowly pour the oil in. The needs to be added very slowly in order for the mixture to emulsify. The should take 1-2 minutes.
