This was one of the very first dinners I learned how to make. In the original recipe I grew up with, the chicken is microwaved. I'm not in the business of microwaving meat, so I bake this or cook it in the crockpot. Serve with rice and steamed veggies.
GF* - Be sure to use gluten free soy sauce.
Ingredients:
2 chicken breasts
1 tablespoon cornstarch
2 tablespoons brown sugar
1/2 teaspoon oregano
1 clove garlic, minced
2 tablespoons olive oil
1/4 soy sauce or tamari
1/2 cup red wine
1/2 cup water
1/2 cup raisins
Preparation:
1. Preheat oven to 375 degrees.
2. Place chicken in coverable casserole dish or Dutch oven.
2. In a small bowl, combine cornstarch, brown sugar, oregano, garlic, oil, soy sauce, wine, water and raisins. Pour over chicken.
3. Cover chicken and bake for 30 minutes. Serve with rice and steamed veggies.
