My sister sent me a Tasty recipe to try out gluten free for her - this cauliflower bread. It turned out so much better than I expected. I brought this bread with some Sartori cheese to a homemade pizza and movie night at a friends place. Everyone loved it and couldn't believe that it was gluten free!
Ingredients:
1 head cauliflower, cut into florets
6 eggs, separated
1 1/2 cups almond flour
1/2 cup Sartori Parmesan, divided
5 cloves garlic, minced
1 tablespoon baking powder
5 tablespoons butter, melted
1 1/2 teaspoons Italian seasoning, divided
pinch salt
1/4 teaspoon sesame seeds
Preparation:
1. Preheat oven to 350 degrees.
2. Blend cauliflower florets in the food processor until fine.
3. Place blended cauliflower in a microwave safe bowl and cook on high for 4 minutes.
4. Let cauliflower cool, then place in cheesecloth and sqeeze out the liquid. More liquid than you think with come out.
5. Whip egg whites to stiff peaks.
6. Place egg yolks, 1/3 of the whipped egg whites, almond flour, 1/4 cup Parmesan cheese, minced garlic, baking powder, melted butter, and a pinch of salt in the bowl of a stand mixer and mix well.
7. Add remaining egg whites, cauliflower, and 1 teaspoon Italian seasoning. Mix well.
8. Grease a loaf pan. Pour dough into pan and smooth the top. Sprinkle with sesame seeds, 1/2 teaspoon Italian seasoning, and 1/4 cup Parmesan cheese.
9. Bake for 45-50 minutes.
