For my birthday, my sister got me a Veggetti. We have a history of getting each other silly gifts and are suckers for the as seen on TV products. I decided to try this thing out and make some zucchini pasta for dinner. It actually worked really well! I tossed the noodles in a garlic lemon butter sauce and made parmesan crusted chicken to go with it.
Ingredients:
1 large chicken breast
1 egg, whisked
3/4 cup bread crumbs (substitute GF, if needed)
salt and pepper
1 teaspoon garlic powder
2 zucchini
1/2 lemon, juiced
3 cloves garlic, minced
3 tablespoons butter
1/2 wedge Sartori Parmesan, shredded
Preparation:
1. Filet the chicken breast, then cut in half. This should give you 4 roughly equal sized pieces.
2. Using a Veggetti, create noodles with the 2 zucchini. Set aside
3. Mix 1/2 of the shredded Parmesan, bread crumbs, garlic powder, salt, and pepper together. Place on a plate.
4. Heat a medium sized skillet to high heat. The pan is hot enough when a drop of water sizzles against the pan.
5. Coat each piece of chicken in the egg wash, then coat well with the bread crumb and cheese mixture. Coat and set aside each piece. Once all chicken is breaded, place in hot skillet. Sear chicken on each side, then turn down the heat to allow chicken to cook through, flipping mid way through. Chicken will need to cook for 5-7 minutes.
6. When chicken is cooked through, remove from pan. Place on a place and cover with foil to keep warm.
7. Add lemon juice to deglaze the pan. Add garlic and butter.
8. After butter has melted, add zucchini. Stir in pan for about 5 minutes. The noodles are done when they start to soften.
9. Serve zucchini noodles with chicken and dust with Parmesan cheese.
