I am a big fan of oatmeal for breakfast. I've been a long-time devotee to Overnight Oats. During the work week, I was itching to try something a little different for breakfasts. My co-worker Megan suggested I try an oatmeal bake. I love this Berry Oatmeal Bake, but I needed to mix it up a little. Peanut butter and bananas have been one of my favorite snacks since I was a kid, so incorporating it into oatmeal was a no brainer.
Ingredients:
2 cups unsweetened almond milk
2 eggs
1/3 cup pure maple syrup
1/2 cup crunchy peanut butter
5 bananas, divided
3 cups old-fashioned whole oats
1 teaspoon baking powder
1 teaspoon cinnamon
1 tablespoon chia seeds
1 teaspoon vanilla
1/4 teaspoon salt
Preparation:
1. Preheat the oven to 350 degrees. Spray a 9×9 inch or 11×7 inch baking pan with nonstick spray. An 8x8 pan will be too small. A 13x9 inch pan can be used for thin pieces .
2. Mash 2 bananas and slice remaining 3 bananas into 3/4-inch pieces. The mashed bananas will be mixed into the oatmeal. The sliced bananas are gently stirred in at the end.
3. Whisk all of the ingredients except sliced bananas together in a large bowl. The mashed bananas should be mixed in at this step.
4. Gently fold in banana slices.
5. Pour into prepared baking pan. Bake for 35 minutes or until the center appears almost set. It will continue to solidify as it cools. If using a 13x9 pan, cook for about 20 minutes.
6. Cool for 5 minutes before serving. Cover leftovers tightly and refrigerate for up to a week.
