These are an easy no-bake bar that is mostly pantry items. They come together pretty quickly, then need to chill in the fridge before cutting. I wrap the bars individually in plastic wrap to make of easy grab and go. These are a great quick breakfast or snack before I head to the gym after work. I prefer to use mini chocolate chips to keep the bars more cohesive, but you can use regular chocolate chips if you'd like.
Ingredients:
1 cup smooth creamy peanut butter, sun butter, or cashew butter
2/3 cup honey
1 teaspoon vanilla
1/2 teaspoon sea salt
2 1/2 cups whole rolled oats
1/3 cup mini chocolate chips
3 tablespoons crushed peanuts or cashews
Preparation:
1. Line an 8x8 baking pan with parchment paper and spray with non-stick cooking spray.
2. In a large bowl, stir together the peanut butter, honey, vanilla, and salt.
3. Add the oats, chocolate chips and the nuts. Stir to combine and press firmly into the pan. Use a second piece of parchment paper on top of the bars and use a second 8x8 pan to press down to flatten the mixture. Chill for at least 1 hour, then slice into bars. Individually wrap with plastic wrap and store in the fridge.
