I originally had this sauce with fish, but I really do like it better with pasta. The pesto flavor blends really well with the sauce. My favorite pesto tortellini is from Trader Joe's, which I buy and freeze until I want to use it. Meat could very easily add to this dish. Some blackened chicken or shrimp would be great!
Ingredients:
1 package pesto tortellini
1/2 cup broccoli, cut into bite size pieces
Sauce:
1 tablespoon butter
2 cloves garlic, minced
1/2 cup heavy cream
1/2 cup champagne
1/2 cup Sartori Parmesan cheese, grated
1/2 teaspoon paprika
salt and pepper
Preparation:
1. Boil water and cook tortellini according to package directions. Tortellini can be boiled frozen or defrosted. Frozen tortellini will take a a few minutes longer to cook than defrosted tortellini.
2. Melt butter in a sauce pan. Add garlic and saute for 2-3 minutes.
3. Add cream and champagne to sauce.
4. Stir in paprika, salt and pepper. Let sauce simmer for 8-10 minutes.
5. Add cheese. Stir to thicken sauce. If sauce is still too thin, stir in 1 teaspoon flour.
6. Steam broccoli while sauce is cooking. To steam, put broccoli in a shallow baking dish. Add water to dish until water is about halfway up broccoli. Season with salt and pepper. Cover with plastic wrap. Microwave on high for 4 minutes.
7. Drain tortellini and return to pot. Add steamed broccoli and sauce and top with more Parmesan cheese.
