For my friend Carli's birthday, I was making Sweet Potato and Black Bean Enchiladas. I needed some Pico de Gallo to top them and was not about to use canned Pico de Gallo. This is a very fresh and tasty version. I really like to use Roma tomatoes for the flavor. This is great for enchiladas, nachos, or fajitas.
Ingredients:
4 Roma tomatoes, diced
1/2 red onion, diced
1 jalapeno, seeded and diced
3 tablespoons cilantro
1 lime, juice
1/2 teaspoon salt
Preparation:
1. Prep all ingredients and mix together in a bowl. Store in an airtight container.
