My mom has always loved potato pancakes. For Christmas Eve brunch this year, my sister suggested we make potato pancakes for brunch over the holidays. She had found a Tasty recipe that we adapted to use better cheese. These turned out great! The whole family really enjoyed them as part of our brunch. Substitute for gluten free breadcrumbs to make this gluten free.
Ingredients:
2 large russet potatoes, peeled
1/3 yellow onion
3 eggs
2 cloves garlic
1 tablespoon cornstarch
1 teaspoon salt
1/4 teaspoon pepper
1/2 cup grated Sartori Montamore
1/2 cup grated Sartori Black Pepper BellaVitano
1/3 cup breadcrumbs
1/4 cup olive oil, for frying
Preparation:
1. Using an automated grater, shred the potatoes into a bowl. Use paper towels to squeeze out as much liquid as possible.
2. Set aside and grate the onion and garlic.
3. Add the grated potatoes, onion, and garlic to a large bowl. Add in the eggs, cornstarch, salt, pepper, cheese, and breadcrumbs. Mix until combined.
4. Take 1/4 cup of the potato mixture and form into a thin patty, about 1/3-inch thick.
5. Heat cooking oil over medium-high heat and place potato patty into the skillet. Cook for 3-5 minutes on each side, or until golden brown and crispy on the outside. Repeat with remaining patties.
6. Serve warm. Top with applesauce or sour cream and scallions.
