I got a Crate and Barrel gift card through secret santa at work. One of my favorite stores with all the kitchen gadgets I could possibly want. What do I get? A taco rack and frosting spatula. Was legitimately excited when the package came so that I could make tacos (and Leo got a box to play in, which is always exciting). I had seen some tacos in the Rachael Ray magazine that I wanted to try, and they were very flavorful. I had lots of leftover filling, which will be great on salad for lunch at work this week.
Ingredients:
2 cups cooked chicken, shredded
1 large tomato, chopped
1/2 can kidney beans, drained and rinsed
1/4 cup chopped cilantro
1/4 cup fresh lime juice
1 tablespoon chili powder
salt and pepper
8 yellow corn taco shells, warmed
1/2 cup sour cream
1 cup sharp cheddar, shredded
4 scallions, thinly sliced
Preparation:
1. Preheat oven to 200 degrees.
2. In a medium steel bowl, toss together the chicken, tomato, beans, cilantro, lime juice, chili powder, salt and pepper.
3. Put steel bowl in the oven to keep chicken mixture warm, 5 minutes.
4. Place taco shells on a cookie sheet and place in the oven for 3 minutes to heat.
5. Using a slotted spoon, fill the taco shells with the chicken mixture.
6. Top each with the sour cream, then sprinkle with cheddar and scallions.
