I was making a loaf of Cranberry Pumpkin Bread to bring into work and the recipe only calls for 1/2 a can of pumpkin, so I decided to make another loaf of bread with the remaining pumpkin. My friend Mike doesn't like cranberries, so I put chocolate chips in this loaf instead. The result was great! Many of my coworkers preferred the chocolate chip version.
Ingredients:
1 1/2 cups all-purpose flour
2 1/2 teaspoons pumpkin pie spice
1 teaspoon baking soda
3/4 teaspoon salt
1 1/2 cups granulated sugar
7.5 ounces (half of a 15 ounce can) pumpkin
2 eggs
1/2 cup vegetable oil
1/4 cup orange juice
1/2 cup chocolate chips
Preparation:
1. Mix sugar, pumpkin, eggs, oil, and orange juice in medium bowl.
2. Stir in flour, pumpkin pie spice, baking soda, and salt.
3. Add chocolate chips and gently mix.
4. Pour batter in well greased loaf pan.
5. Bake at 350 degrees for 60 minutes.
