These muffins are the epitome of fall. I love the smell of baked pumpkin this time of year. These muffins are great for breakfast or as a snack. Makes 18 muffins.
Ingredients:
1 1/2 cups all-purpose flour
2 1/2 teaspoons pumpkin pie spice
1 teaspoon baking soda
3/4 teaspoon salt
1 1/2 cups granulated sugar
7.5 ounces (half of a 15 ounce can) pumpkin
2 eggs
1/2 cup vegetable oil
1/4 cup orange juice
3/4 cup chocolate chips
Preparation:
1. Mix sugar, pumpkin, eggs, oil, and orange juice in medium bowl.
2. Stir in flour, pumpkin pie spice, baking soda, and salt.
3. Add chocolate chips and gently mix.
4. Pour batter into a well created muffin pan.
5. Bake at 350 degrees for 16-18 minutes, until a toothpick comes out clean.
