When cooler weather hits, I always want to cook with pumpkin. A few of my favorites are Pumpkin Cranberry Bread, Pumpkin Risotto, and Pumpkin Pie. I had never made pancakes with pumpkin before, so these were a fun Sunday brunch this weekend. Highly recommend to make with toasted pecans!
Ingredients:
1 1/2 cups milk
1 cup pumpkin puree
1 egg
2 tablespoons vegetable oil, plus additional to coat skillet
2 tablespoons vinegar
2 cups flour
3 tablespoons brown sugar
2 teaspoons baking powder
1 teaspoon baking soda
2 1/2 teaspoons pumpkin pie spice
1/2 teaspoon salt
Preparation:
1. In a medium bowl, whisk together milk, pumpkin puree, egg, vegetable oil, and vinegar.
2. In a separate bowl, whisk together flour, brown sugar, baking powder, baking soda, salt, and pumpkin pie spice.
3. Gradually whisk the dry ingredients into the wet ingredients until fully combined.
4. Coat skillet in vegetable oil and heat over medium heat. Once hot, add pancakes (~2.5" in diameter). Once bubbles rise to the surface, flip pancakes. Cook for an additional 2 minutes until cooked through. Repeat with remaining batter. Makes ~10 large pancakes.
5. Top pancakes with preferred toppings - toasted nuts, butter, syrup, whipped cream. Enjoy!
