This salad is the perfect summer BBQ side dish. It comes together very quickly and is fresh and light. It goes well with steaks, chicken, pizza, and burgers!
Ingredients:
4 radishes, sliced very thinly
2 stalks celery, sliced very thinly
1 cucumber, sliced very thinly
3 tablespoons olive oil
1 lemon, zested and juiced
1/4 cup Sartori Parmesan, freshly grated
salt and pepper
Preparation:
1. Use a mandoline to thinly slice the radishes, celery and cucumber into even thickness slices. Combine in a large bowl.
2. Whisk olive oil and lemon juice together in a small bowl.
3. Toss vegetables with sauce just before serving. Season with salt and pepper and top with lemon zest and parmesan.
