This is a wonderful summer dessert. It comes together really quickly and easily. I make this at the lake to make dessert for a bunch of people easily. This is delicious hot with a scoop of vanilla ice cream on top or eating it cold.
Ingredients:
Topping:
3/4 cup all-purpose flour
3/4 cup quick-cooking oats
1/4 cup granulated sugar
1/4 cup brown sugar
1/4 teaspoon ground cinnamon
1/4 teaspoon salt
1/8 teaspoon ground cardamom
6 tablespoons (3/4 stick) unsalted butter, melted
Fruit Mixture:
2 pounds nectarines, halved, pitted, cut into 3/4-inch-thick slices (about 5 cups)
1 (1/2-pint) container fresh raspberries
1/4 cup granulated sugar
2 tablespoons cornstarch
Preparation:
1. For the topping, mix flour, oats, sugar, brown sugar, cinnamon, salt, and cardamom in medium bowl. Add melted butter and rub in with fingertips until mixture comes together in small clumps.
2. For fruit mixture, combine nectarines, raspberries, sugar, and cornstarch in large bowl; stir to blend. Transfer mixture to greased 11x7 baking dish. Sprinkle topping evenly over fruit.
3. Bake at 375 degrees for about 50 minutes, until fruit mixture is bubbling thickly and topping is golden brown. Cool 20 minutes. Serve warm with vanilla ice cream.
