I made this meatloaf for dinner with my friend Meghan. The flavors are fantastic and this came together really easily. For sure the way I will be making meatloaf from now on! The fresh basil and the red wine were great together. We made cauliflower to go with it.
Ingredients:
2 eggs, lightly beaten
2/3 cup grated Sartori Parmesan
1/2 cup seasoned fine dry bread crumbs
1/2 cup thinly sliced scallions
1/2 cup snipped fresh basil
1/4 cup tomato paste
3/4 cup plus 2 tablespoons red wine, divided
2 cloves garlic, minced
1/4 teaspoon salt
2 pounds ground beef
Cheese Filling:
1 cup shredded mozzarella
1/2 cup chopped walnuts
1/2 cup finely chopped oil-packed sun dried tomatoes, drained
3 tablespoons fresh chopped basil
1 tablespoon oil from jar of sun dried tomatoes
1/2 teaspoon lemon zest
Preparation:
1. Preheat oven to 350 degrees.
2. In a large bowl, mix eggs, Parmesan cheese, bread crumbs, scallions, basil, tomato paste, 1/4 cup red wine, garlic, and salt.
3. Stir in ground beef and mix well. Set aside.
4. Make cheese filling. Mix shredded mozzarella, walnuts, sun dried tomatoes, basil, oil, and lemon zest in a small bowl.
5. Grease a 9x5 rectangle pan. Pat meat into 2 9x5 rectangles. Place one rectangle in the pan. Spoon cheese filling into the middle and cover with other meat rectangle. Pinch together to encase the cheese filling. Pour 1/2 cup red wine over the top.
6. Bake for 50-60 minutes. Remove from oven and drizzle with 2 tablespoons red wine. Cut into slices and serve.
