This is a super tasty side dish that goes well with steak, grilled chicken or fish. This comes together quickly and the leftovers are great cold on a salad the next day for lunch
Ingredients:
4 sweet potatoes, peeled, cut into cubes
3 cups pineapple, cut into chunks
1/4 cup zesty Italian dressing
1/4 cup brown sugar
1 tablespoon butter
1/2 teaspoon cayenne pepper
Preparation:
1. Preheat oven to 400 degrees.
2. Place potatoes and pineapples in a large plastic bag.
3. Mix Italian dressing, brown sugar, butter, and cayenne pepper in a bowl.
4. Pour sauce into plastic bag. Seal and shake to coat potatoes and pineapple well.
5. Place on a greased cookie sheet and bake for 45-50 minutes. Turn twice.
