This is a favorite dinner. It's a pretty quick dinner to make. I use homemade tomato sauce that I pre-make and freeze. It speeds up making dinners and is so much tastier that the canned or jarred tomato sauce. I love to serve this with Garlic Bread.
Ingredients:
3 large andouille sausages, sliced into 1/4 inch pieces
1 cup onion, chopped
3 cloves garlic, diced
1 can diced tomatoes
1/2 pint heavy cream
2 heaping tablespoons tomato paste or 3/4 cup tomato sauce
1 tablespoon basil, dried
1/2 cup shredded Parmesan cheese, plus extra for topping pasta
12 ounces pasta
Preparation:
1. Start pasta, as it will need to cook for 11-13 minutes.
2. Add tomato paste/sauce and entire can of tomatoes (tomatoes and juice) in a sauce pan and heat over medium. Once warm, add cream.
3. Heat 1 tablespoon olive oil in a skillet over medium heat. Add onion and garlic. Cook 3-4 minutes.
4. Add sausages to pan. Saute for 5-6 minutes.
5. While sausages are cooking, add cheese and basil to sauce. Stir well.
6. Drain cooked pasta and mix with sauce and onion/garlic/sausage. Top with Parmesan cheese.
