This is a very easy meal that I got from Chef in Training that can either be cooked in a skillet or in a crockpot. The sauce comes together pretty easily and packs a lot of flavor. I'll slow cook it at home during the day while I'm working for lunch and make some rice to go with it. If I'm making this for dinner, I'll add some steamed broccoli.
Ingredients:
2-3 chicken breasts, cubed
salt and pepper
1 cup honey
1/2 cup soy sauce
1 teaspoon Frank's hot sauce
1/4 cup onion, diced
4 tablespoons ketchup
2 tablespoons olive oil
2 clove garlic, minced
1/2 teaspoon red pepper flakes
4 teaspoons cornstarch (dissolved in 6 tablespoons water)
sesame seeds
Preparation:
1. Season cubed chicken in salt and pepper.
2. Combine honey, soy sauce, hot sauce, onion, ketchup, garlic, and red pepper flakes in a small bowl.
3. If cooking in a skillet, heat oil, then add chicken. Cook until mostly cooked through and add sauce. Cover and cook over low for about 5 minutes. Remove chicken and cover with foil. Add dissolved cornstarch and stir. Cover and cook for about 3-4 minutes for sauce to thicken. Add chicken and stir to coat.
4. If cooking in a crockpot, place chicken and oil in bottom of crock pot and stir to coat. Add sauce and cook on low for 3-4 hours, until chicken is just cooked through. Remove chicken and cover with foil. Add dissolved cornstarch to sauce and stir. Cover and cook on high for about 10 minutes. Add chicken and stir to coat.
5. Sprinkle with sesame seeds and serve with rice and steamed vegetables.
