Part of my job includes training customer service representatives. When I know I will be doing training, I bake a bunch of cookies to bring in to help motivate reps and encourage participation. Kelsey's cookies have become well known in the past 18 months and have really helped breakdown the silo between customer service and my operations team! I made snickerdoodles for the training I am doing this week. Sally's Baking Addiction is my go-to site for baking recipes. I used her recipe for these cookies and they are delicious!
Ingredients:
1 stick unsalted butter, at room temperature
1 1/3 cups sugar
1 egg
2 teaspoons vanilla
3 cups flour
2 teaspoons cream of tartar
1 teaspoon baking soda
2 1/2 teaspoons cinnamon
1/2 teaspoon salt
Topping:
1/4 cup sugar
1 teaspoon cinnamon
Preparation:
1. Preheat oven to 375 degrees.
2. Cream butter and sugar together.
3. Add vanilla and egg and mix until smooth.
4. Whisk dry ingredients together. Gradually add to wet ingredients. The dough will be very, very thick.
5. Mix cinnamon and sugar together in a separate bowl for topping.
6. Form balls of dough and roll in cinnamon-sugar topping.
7. Bake cookies for 12 minutes. Let stand on pan for 2 minutes before moving to cool.
