My friend Shannon absolutely loves scotcheroos. She requests them for her birthday (and suggests them for everyone else's birthday!). My friend Allie and I both made versions of scotcheroos for Shannon's birthday this year. It was a great day celebrating Shannon's birthday with all the scotcheroos. I loved Allie's version so much that I asked her for the recipe!
Ingredients:
3/4 cup sugar
3/4 cup corn syrup
1 teaspoon vanilla
5 cups Special K
1 cup chocolate chips
1 cup butterscotch chips
1 3/4 cup peanut butter
Preparation:
1. Bring sugar and corn syrup to a boil, remove from heat.
2. Stir in 1 1/4 cups peanut butter and vanilla.
3. Pour over Special K's in a medium bowl. Mix well. Press into 9x13 pan.
4. To make frosting, melt chocolate and butterscotch chips and 1/2 cup peanut butter. Frost bars and cool.
5. Cover bars and chill before cutting.
