This dish is a great weeknight dinner. It's a little sweet but mostly spicy. It's both hearty and light at the same time. It comes together really quickly and tastes great!
Ingredients:
14.2 oz pack udon noodles
2 medium shallots, thinly sliced
1 tablespoon roasted garlic, minced
2 teaspoons fresh ginger, minced
8 oz shittake mushrooms, sliced
2 baby bok choy, chopped
2 tablespoons olive oil
1/2 teaspoon sesame seeds
Sauce:
4 tablespoons tamari
2 tablespoons hoisin sauce
2 tablespoons sweet Thai chili sauce
2 tablespoons gochujang
1 teaspoon red chili flakes
1 teaspoon rice wine vinegar
1/2 teaspoon sesame oil
Preparation:
1. Mix all sauce ingredients in a small bowl. Set aside.
2. Heat olive oil in a large skillet. Add shallots and cook until soft, about 3 minutes.
3. Add garlic and ginger. Cook for an additional minute or so.
4. Add mushrooms and cook until mushrooms start to soften, about 2 minutes.
5. While mushrooms are cooking, cook the noodles. Poke a few holes in the packets and microwave on high for 90 seconds. Remove noodles from packets and add to skillets. Stir to break apart the noodles.
6. Add sauce and coat noodles well.
7. Add bok choy, cooking until wilted, about 2 minutes.
8. Plate noodles and garnish with sesame seeds.
