Fajitas are one of my go to dinners on weeknights. They are quick and easy to make. I will top them with whatever I have on hand at home, which varies between seasons and weeks. I prefer to make my own fajita seasoning, rather than buying pouches of pre-made seasoning at the grocery store. It tastes better and I know what is all actually in the seasoning. Making your own seasoning also ensures that it is gluten free.
Ingredients:
2 filets
1 tablespoon olive oil
1 red pepper, cut into long strips
1/4 onion, cut into strips
4-6 tortillas (GF* - use corn tortillas to make this gluten free)
Seasoning:
1 tablespoon cornstarch
1 teaspoon garlic powder
2 teaspoons chili powder
1 teaspoon cumin
1 teaspoon paprika
1/2 teaspoon oregano
1/2 teaspoon basil
1/2 teaspoon onion powder
1 teaspoon granulated sugar
salt and pepper
Suggested Add-Ins (all optional):
avocado
mango
shredded lettuce
shredded cheese
red or green salsa
mango salsa
pico de gallo
sour cream
guacamole
Preparation:
1. Prepare and mix seasoning in a separate bowl.
2. Rub steak with 3/4 of seasoning.
3. Heat grill over medium heat. Cook steak, 7 minutes per side for medium rare.
4. Create a foil boat and place pepper, onion, olive oil and remaining seasoning inside. Place on grill and cook for 5-7 minutes.
5. Remove steak from grill and slice into strips.
6. Warm tortillas in the microwave for 10-15 seconds.
7. Assemble fajitas with any other add-ins you may enjoy!
