These are a great holiday cookie! They are a little labor-intensive, but they are so worth it! I've seen them made a few ways. A coworker made a peanut butter cookie with jam in the center for our cookie competition last year. I'm more of a fan of a sugar cookie with jam in the center. These cookies need to be chilled before baking or they will spread quite a bit while baking.
Ingredients:
1 cup unsalted butter, softened
2/3 cup granulated sugar
1 egg
2 teaspoons vanilla
2 cups all-purpose flour
1/4 teaspoon salt
1/4 cup jam (raspberry or apricot are my favorite to use)
Preparation:
1. Beat butter and sugar together in medium sized bowl until creamy.
2. Mix in egg and vanilla until batter is fluffy.
3. Gradually add flour and salt until well mixed.
4. Chill cookie dough for 2 hours.
5. Make 1-inch dough balls. Place 2-inches apart on baking sheet.
6. Press down on cookies and make a dent in the center of each cookies using your fingers or the handle of wooden spoon.
7. Spoon about 1/4 teaspoon of jam into the center of each cookie.
8. Bake at 375 degrees for 8-10 minutes until cookies start to slightly brown.
Makes 2 1/2 dozen cookies.
