Right before my sister went back to school for her final semester as an undergrad, my family came to visit me for the day. We went to Wheat's End Cafe, a completely gluten-free restaurant in Chicago for brunch. The food was actually pretty good. My sister was in heaven. We got pedicures in the afternoon, while my dad when to go talk to the cheese lady at Whole Foods. He seems to know cheese people everywhere these days. He came back with a bunch of fresh gruyere that we used to make a chicken dip that turned out just okay and isn't blog worthy. However, the additional gruyere I used to make these divine scalloped potatoes. These were amazing and will be added to my regular rotation of potatoes!
Ingredients:
8 ounces heavy cream
2 cloves of garlic, minced
3 sweet potatoes, peeled and thinly sliced
1 1/2 teaspoon fresh thyme leaves
1/2 teaspoon salt
1/2 teaspoon pepper
1 1/2 cups shredded gruyere cheese
Preparation:
1. Preheat oven to 400 degrees.
2. Place heavy cream, garlic, thyme, salt and pepper in a sauce pan on the stove. Bring to a boil, then remove from heat. Stir to prevent a film from forming over the top.
3. Grease an 8x8 glass dish. Layer potatoes, cream mixture, then cheese. Repeat until out of ingredients. I got 4 layers of potatoes in. Sprinkle cheese over the top of the potatoes and cover pan with foil.
4. Bake covered for 30 minutes. Remove foil and bake for another 25 minutes. Remove from oven and let cool for 20-30 minutes before serving.
