I got this recipe idea from a Rachael Ray Everyday cooking magazine that I got signed up for free when I ordered a new pair of workout pants online. Gotta love that - buy workout clothes and get a cooking magazine full of delicious looking food! The original recipe used ground lamb, which the high end grocery store near me didn't have, so I used ground turkey instead. Ground turkey is cheaper and healthier than ground lamb anyways. I make a lot of egg wraps for breakfast, so I had small tortillas already to use and fry at home.
Makes 4.
Ingredients:
1 lb ground turkey
2 teaspoons ground cumin
1/2 teaspoon allspice
1/2 teaspoon chili powder
1/2 teaspoon garlic powder
salt and pepper
1/4 cup raisins
1/2 cup salsa
4 tostada shells (pre-made or homemade)
1 lime, juiced
2 avocados
1 scallion, sliced
Preparation:
1. In skillet, cook turkey and spices over high, about 4 minutes. There is enough fat in the meat that additional oil isn’t necessary.
2. While turkey is cooking, fry tortillas if making at home.
3. Add raisins, half of lime juice, salsa; simmer to warm.
4. Mash avocados and mix in half of lime juice.
5. Top shells with turkey, mashed avocado, and scallions.
