I set out to make Boston Cream Pie, but my custard didn't set quite right. The cake wasn't quite thick enough to make into 2 layers, but it still tasted great! I made some Oreo frosting, and the cake tasted great! This cake is best the day it is baked. I found the cake significantly dried out in the next day or two.
Ingredients:
Cake:
1 cup plus 2 tablespoons cake flour, sifted
2/3 cup granulated sugar
1 1/2 teaspoons baking powder
1/4 teaspoon salt
1/2 cup milk
1/4 cup vegetable oil
2 eggs, separated into whites and yolks
1 teaspoon vanilla
1/4 teaspoon cream of tartar
Frosting:
4 ounces cream cheese, room temperature
1/4 cup butter (1/2 stick), room temperature
1 3/4 cups powdered sugar
1/2 teaspoon vanilla
8 Oreos
Preparation:
1. In a medium mixing bowl sift together cake flour, sugar, baking powder, and salt.
2. Add milk, oil, egg yolks, and vanilla. Beat with an electric mixer on medium speed until well combined.
3. In a large mixing bowl, beat egg whites and cream of tartar on medium to high speed until soft peaks form. Pour the egg yolk mixture over the egg white mixture and fold in.
4. Gently pour the batter into a 9-inch greased pie pan or 8x8 pan. Bake at 350 degrees for 25 to 30 minutes or until the top springs back when lightly touched. Cool completely.
5. To make the frosting, cream together butter and cream cheese. Add vanilla.
6. Add powdered sugar slowly until blended well.
7. Chop regular-sized Oreos very fine (a food processor works well). Add to frosting.
8. Frost cake.
