This is one of my favorite spring fruit salads. The vanilla-honey yogurt dressing is light and fresh and makes for a healthy fruit salad. Ina Garten's Food Network show is one of my favorites. It is often on when I am at the gym, so I spend a lot of time watching the show. I made this fruit salad for Easter brunch for my family along with Asparagus-Spinach Feta Quiche. I add nuts to this fruit salad for texture. I keep leftovers of the yogurt mixture to eat with fruit or nuts for breakfast later in the week.
Ingredients:
2 cups plain Greek yogurt
2 tablespoons honey
1/2 teaspoons vanilla
1/2 vanilla bean, seeded
1/2 orange, juiced
1 banana, sliced
1/2 pint blueberries
1/2 pint raspberries
1 pint strawberries, hulled and halved
1 bunch green grapes, halved
1/3 cup slivered almonds
Preparation:
1. Mix yogurt, honey, vanilla, and vanilla bean seeds in a bowl.
2. Toss orange juice with banana slices. This will help prevent the banana from browning.
3. Add berries and grapes to bowl with banana. Toss.
4. Divide fruit mixture into bowls. Top with large dollops of yogurt mixture. Sprinkle with slivered almonds.
