This makes for a very nice combined starch and vegetable with dinner. It goes very nicely with grilled chicken or steak.
Makes 6 servings.
Ingredients:
2 medium carrots
1/2 cup celery, diced
1 medium onion, chopped
1/4 cup yellow pepper, diced
1/4 cup red pepper, diced
2 cloves garlic, minced
2 tablespoons olive oil
1 medium zucchini, diced
4 teaspoons dried basil
Salt and pepper
Dash hot sauce
1 cup uncooked couscous
1 1/2 cups chicken broth
Preparation:
1. Heat oil in a large skillet over medium heat.
2. Saute carrots, celery, onion, garlic, and peppers for 5-7 minutes, until they start to soften. Add in zucchini, basil, salt, pepper and hot sauce.
3. Stir in couscous and broth. Bring to a boil. Cover and remove from heat.
4. Let stand for 5-8 minutes. Fluff couscous with a fork. Serve immediately.
