This is a great summertime side dish to go with grilled or smoked meat. It comes together really quickly and all the components can be prepped ahead of time.
Ingredients:
3 cups watermelon, cut into bite-size cubes
1 1/2 cups feta, cut into 1/2" cubes
1/4 cup red onion, cut into thin strips
1/8 cup fresh basil, cut into strands
1/2 cup balsamic vinegar
salt and pepper
Preparation:
1. Heat a small saucepan over medium heat and add balsamic vinegar. Simmer until reduced to 1/8 cup. Set aside to cool and thicken.
2. Mix watermelon and feta cubes with red onion and basil. Season with salt and pepper. Drizzle with reduced balsamic vinegar.
