This is a nice light dinner. The key is to use very fresh fish. I usually buy fish the day I am going to make it.
Ingredients:
1 pound whitefish filets - flounder is my favorite
2 tablespoons butter, melted
2 tablespoons white wine
1 tablespoon lemon juice
salt and pepper
1/4 cup almond silvers
2 tablespoons fresh parsley, minced
Preparation:
1. Stir together melted butter, wine, lemon juice, salt and pepper.
2. Place fish in greased baking dish. Pour sauce over fish.
3. Bake fish at 450 degrees for 18-20 minutes, flipping fish half way through.
4. Fish should flake easily when done. Remove from fish from pan. Stir in almonds and parsley.
5. Spoon sauce over fish.
Serve with steamed vegetables.
