Acai smoothie bowls are one of my go to post-workout brunches or weeknight dinners after a long work day and post-work workout. I usually have everything on hand, and they are very flexible to substitute different types of fruit based on what I have on hand. Most grocery stores sell frozen acai packets in the frozen fruit section. The key to the consistency of these bowls is to use enough frozen fruit.
Makes 2 bowls.
Ingredients:
Puree:
1 packet frozen acai puree
2 cups frozen strawberries
1 bananas
2 cups fresh spinach
2 tablespoons peanut butter
1 scoop vanilla protein powder
Toppings:
1 banana, cut into 1/3" slices
4 strawberries, cut into thin slices
1 nectarine, diced
2 tablespoons sliced almonds
1 tablespoon cocoa nibs
1/4 cup peanut butter granola
Preparation:
1. Add puree ingredients to a blender. Process until smooth. You may need to take a spatula and scrape down the sides of the blender and process again.
2. Split puree into two bowls.
3. Top with fruit, nuts, and granola as desired. Serve cold and eat immediately.
