This is a a nice fall weeknight dinner. The flavors in the chicken are really good and go really well with the Carrot Apple Soup. This is a light weeknight chicken dish that is easy to make.
Ingredients:
2 chicken breasts
3 tablespoons butter, divided
3/4 cup apple cider
1 tablespoon Dijon mustard
1/2 teaspoon sage
1 apple, sliced
Preparation:
1. Preheat oven to 375 degrees.
2. Spray coverable baking dish and place chicken, 2 tablespoons butter and apple cider in dish.
3. Bake chicken for 30 minutes.
4. When chicken has 5 minutes left, sauté apples in 1 tablespoon butter on the stove.
5. Remove chicken from dish and whisk mustard and sage into cider.
6. Serve chicken with sauce and sautéed apples.
