I started making this dinner my senior year of college. It's incredibly simple and made a great dinner for busy days. I love crock-pot recipes and this one is about as easy as they get. This is a recipe I originally found on Chef in Training. The originally recipe called for apricot-pineapple jam, which I couldn't find. Apricot jam is easy to find, however. I added fresh pineapple, and I think it ended up better than the original recipe would have! I serve this with mashed potatoes and a salad.
Ingredients:
2 chicken breasts, cut in half
1/2 cup apricot jam or jelly
1/2 cup Catalina or French dressing
1 packet onion soup mix
1/2 cup pineapple (fresh or canned tidbits)
GF* - Lipton's onion soup mix used to be gluten free, but now contains barley. To make your own at home, mix together 1/4 cup dried onion flakes, 2 tablespoons low-sodium beef bouillon granules, 1/4 teaspoon onion powder, 1/4 teaspoon parsley flakes, 1/8 teaspoon celery seed, 1/8 teaspoon paprika, and 1/8 teaspoon ground black pepper. This is equivalent to one packet of soup mix.
Preparation:
1. Place chicken in crock pot.
2. Mix jam, Catalina dressing and onion soup mix together in a bowl. Pour over chicken.
3. Cook on low for 4 hours.
4. Add pineapple for the last 15 minutes.
