When I was in college, Bagels Forever was one of my favorite places to get a quick breakfast. Their maple cinnamon bagels toasted with warm cream cheese are so so good. They also made great breakfast sandwiches. I recently found the bagels in the frozen section of a grocery store near me. So now I make the bagel breakfast sandwiches at home!
Ingredients:
1 bagel, toasted (onion or everything bagels are the favorites in my household)
2 eggs
1 1/2 tablespoons milk
1/4 cup shredded cheese (Sartori Montamore and Parmesan are what I usually use)
1 1/2 tablespoons cream cheese
2 strips bacon or Canadian bacon, cooked
Salt and Pepper
Italian Spice blend (garlic powder, onion powder, oregano, basil)
Sriracha
Preparation:
1. Whisk together eggs, milk, and spices in a small bowl. Pour into small skillet heated over medium.
2. Scramble eggs.
3. Toast bagel while eggs are cooking.
4. Arrange eggs in a circle the size of the bagel in the skillet. Sprinkle cheese over scrambled eggs in skillet. Let melt.
5. Spread cream cheese on the bottom of the bagel
6. Place bacon on top of the cream cheese.
7. Place eggs on top of the bacon. Drizzle with sriracha. Top with other half of bagel.
