This was originally my aunt's recipe that I modified to make fluffier. I added Bailey's for a richer flavor as well. These are a personal favorite, as well as a favorite of several friends. I often get requests to bake this for work food days. Enjoy!
Ingredients:
3 ripe bananas, mashed
1 cup sugar
1 egg
1/4 cup vegetable oil
1/2 cup applesauce
1 teaspoon cinnamon
2 cups all-purpose flour
2 teaspoon baking soda
3 tablespoon buttermilk
2 tablespoons vanilla
3 tablespoons Baileys irish cream
1/2 cup chocolate chips
Note: Buttermilk substitute - mix 1/3 cup milk, 1 teaspoon vinegar, let sit 5 mins. Use 3 tablespoons for recipe.
Preparation:
1. Preheat oven to 300 degrees.
2. In a large mixing bowl, mix bananas, sugar, egg, oil, and applesauce.
3. Add flour, baking soda, and cinnamon and mix until just blended.
4. Add buttermilk, vanilla, and baileys and blend again. Do not over mix.
5. Stir in chocolate chips.
6. Fill muffin tins until 2/3 full. Bake small muffins for 21-23 mins. Large muffins 25-30 mins.
