This stew is one of my favorite family recipes. It's one of my dad's mother's recipes. With only a few ingredients, this stew is easy to prep and makes a wonderful winter weeknight meal. My parents have traditionally prepared this in foil in a roasting pan, but I use a crock pot. Enjoy!
Serves 3-4
Ingredients:
1 pound stew beef, cubed
2 baking potatoes, peeled and cubed
1 can cream of celery soup
1 packet dried onion soup mix
1 red pepper, cubed
1/4 onion, cubed
Preparation:
1. In a crock pot, place beef, potatoes, soup, and onion soup mix. Mix well.
2. Cook on high for 3-4 hours, then turn down to low for 3-4 hours.
3. Add veggies and stir well. Cook on high for 1 more hour.
