These potatoes go well in a breakfast burrito, alongside eggs, or in a scrambler. They are easy to make; they just need enough time to bake in the oven so they are cooked through and crisp up a little.
Ingredients:
2 pounds red potatoes, cubed (not peeled)
2 tablespoons olive oil
1 teaspoon pepper
1/2 teaspoon salt
1/2 teaspoon garlic powder
1/2 teaspoon paprika
Preparation:
1. Place cubed potatoes in a gallon ziploc bag, add olive oil and spices. Shake to evenly coat.
2. Spread potatoes in a single layer on a baking sheet.
3. Bake at 350 degrees for 45 minutes, flipping potatoes twice. Broil for 2-3 minutes to crisp up the potatoes.
