Now that the weather is finally getting nicer, it's great to be able to spend Sunday's grilling. I used to order Famous Dave's pineapple rage wings all the time when I was in college. Since I moved to Chicago, I haven't been able to eat them regularly. This is my take on the BBQ sauce. I made drumsticks for the extra meat and grill them instead of frying them. This BBQ sauce is also great with Sweet Potato Fries.
Ingredients:
10 drumsticks or 2 dozen chicken wings
BBQ Sauce:
2 cups ketchup
1/2 cup water
1/4 cup apple cider vinegar
1/4 cup balsamic vinegar
1/8 cup molasses
2 tablespoons brown sugar
1 tablespoon hickory Liquid Smoke
1 tablespoon Worcestershire sauce
1/2 tablespoon garlic powder
1/2 tablespoon onion powder
1/2 tablespoon Dijon mustard
salt and pepper
3 habanero peppers, seeded
2 cups pineapple
Preparation:
1. To make BBQ sauce, blend habanero peppers and pineapple in blender until smooth.
2. In a medium sauce pan, combine all ingredients. Simmer over medium, stirring occasionally, until sauce thickens. This takes about 20 minutes.
3. Marinate drumsticks in 1/2 of sauce for at least 2 hours. Do not marinate longer than 8 hours or the acidic pineapple juice will start to cook the chicken.
4. Heat grill to high heat. Grill drumsticks for 1-2 minute per side on high. Turn heat down to medium and grill for about 20 minutes, turning occasionally.
5. Brush drumsticks with remaining sauce 2 minutes before removing from grill. Serve warm.
