These are a naturally gluten free cookie that come together very quickly and pack a lot of chocolatey flavor. My sister and I made these, then proceeded to eat half of them. They are great! These cookies freeze well. I often make these as part of my Christmas cookie baking marathon. This recipe makes 2 dozen cookies, but I usually double it as they are a standout favorite amongst friends and family.
Makes 2 dozen
Ingredients:
1 1/2 cups bittersweet chocolate chips, divided
3 egg whites, at room temperature
2 cups powdered sugar, divided
1/2 cup unsweetened cocoa powder
1 tablespoon cornstarch
1/4 teaspoon salt
Preparation:
1. Preheat oven to 350 degrees. Line 2 baking sheets with silicone baking mats.
2. Microwave 1 cup chocolate chips for 45 seconds. Stir. Microwave on 15 second internals, stirring, until smooth. Set aside to cool.
3. Whisk egg whites together with a hand mixer until foamy and double in volume. Gradually add 1/2 cup powdered sugar.
4. In a separate bowl, whisk together cocoa powder, cornstarch, 1 cup powdered sugar, and salt.
5. Gradually add dry ingredients to whipped egg whites.
6. Add cooled melted chocolate and mix well.
7. Stir in 1/2 cup chocolate chips.
8. Place 1/2 cup powered sugar in a bowl. Roll into 1-inch balls. Roll in powdered sugar.
9. Bake for 10-12 minutes, until cookies are firm.
10. Remove from baking sheet and cool on a cooling rack.
