I make this for Friendsgiving every year. I'm not really a fan of traditional stuffing, so last year, I decided to try a stuffing with more ingredients that I liked. I made this in a pan, not in the turkey. I prepared it the night before but did not bake it. I covered and refrigerated it overnight. Prior to baking, I poured an extra 1/4 cup of broth over the stuffing, and it came out moist and fresh! My friend Brooke even made it for her family's Thanksgiving! This will be made every year!
Ingredients:
1/2 cup butter
1 1/2 cups celery, chopped
1 cup yellow onion, chopped
8 cups corn bread, cubed
4 cups dry wheat bread, cubed
2 cups apples, unpeeled and chopped
1 cup craisins
1 1/2 teaspoons dried sage (or 2 tablespoons fresh, chopped)
1 teaspoon dried thyme (or 1 teaspoon fresh thyme, chopped)
1/2 teaspoon salt
1/2 teaspoon pepper
1 3/4 cups chicken or turkey broth
1/4 cup chicken or turkey broth (optional - for baking the next day)
Preparation:
1. In a large skillet melt butter over medium heat. Add celery and onion. Cook for about 5 minutes. Remove from heat.
2. Stir corn bread, bread cubes, apples, craisins, sage, thyme, salt, and pepper into onion mixture.
3. Add broth to moisten, stirring to combine.
4. Spoon stuffing into a baking dish.
5. Bake at 325 degrees. Bake, covered with foil, for 40 minutes. Uncover. Bake for an additional 15 to 20 minutes.
