It doesn't take much more than bread, Brie, and butter to convince me an appetizer will be delicious. This Half Baked Harvest recipe is one of my favorites. I like to make pull-apart breads for group dinners, which has been a little difficult the past year in age of COVID. Hard to resist the temptation to make this app just for myself!
Ingredients:
1 loaf sourdough bread - round or oval
4 tablespoons butter, divided
2/3 cup raw pecans, chopped
3 tablespoons brown sugar
1 cup dried cranberries - Craisins
12 oz Brie, cut into small cubes
Preparation:
1. Preheat the oven to 350 degrees. Line a cookie sheet with foil or a Silpat mat.
2. Use a serrated knife to cut the bread. Cut vertically, then horizontally to create 1-inch cubes. Be careful not to cut all the way through the bottom of the bread. Place bread on the lined cookie sheet.
3. In a small bowl, mix the pecans, brown sugar, and 2 tablespoons butter. This works best if you just use your fingers!
4. Melt the other 2 tablespoons of butter.
5. To assemble to loaf, drizzle 2 tablespoons of melted butter into all the nooks and crannies of the bread.
6. Take the slices of brie and insert into the bread, both vertical and horizontal.
7. Insert the pecan mixture into the nooks and crannies of the bread.
8. Bake bread for 15-20 minutes, until cheese is melted. Serve warm!
