I got biscuit cutters for Christmas and have been looking for an opportunity to use them! I made these biscuits to go along with a steak dinner. They are great with dinner. Make sure to use fresh chives. This recipe was a great find in a Rachael Ray magazine!
Ingredients:
1 1/3 cups flour
1 tablespoon baking powder
1/4 teaspoon baking soda
1 stick cold butter, cubed
1/2 cup plus 2 tablespoons buttermilk
1 cup feta, crumbled
1/3 cup chives, chopped
Preparation:
1. Preheat oven to 425 degrees. Line a cookie sheet with a baking mat or foil.
2. Whisk flour, baking powder ,and baking soda together in a small bowl.
3. In a food processor, cut cold butter cubes into the flour mixture.
4. Move mixture to a bowl and stir in buttermilk, feta and chives.
5. On a floured surface, pat dough into a 1-inch thick disk.
6. Use a 2-inch biscuit cutter to form biscuits. Place on baking sheet.
7. Bake for 15 minutes, until golden.
