I made this as a side for dinner with Honey Chicken Skewers. I ended up loving it so much that I made it again the next night and used it on my salads for lunch throughout the week! I started looking for a corn recipe after my friend Shannon said there were no corn recipes on the website, and she was looking for a good one. Thanks to Shannon for the initial inspiration that ended up in one of my favorite sides! I also made this for my friends when they came up to spend the weekend at my parent's lake house. My friend Mike, who tells me he hates corn, took a few bites and ended up loving this dish. He has since asked me for the recipe several times. This side has converted several people into corn lovers!
Ingredients:
4 ears corn, shucked
2 scallions, thinly sliced
1 clove garlic, minced
2 tablespoons butter, cut into chunks
2 tablespoons feta
salt and pepper
Preparation:
1. Heat grill over medium heat. Grill corn until slightly charred, about 8 minutes.
2. Cut corn off the cob and toss with butter, scallions, and garlic. Salt and pepper to taste.
3. Top with feta.
4. Serve warm or cold.
