When I have more apples than I know what to do with, I start baking. I made Apple Crisp, Apple Cinnamon Mini Cheesecakes, and this cake. This batter comes together really easily. This smell of this baking was like an apple pie scented candle. Of course was even better topped with one of my favorite frostings - cinnamon cream cheese.
Ingredients:
Cake:
2 eggs
1 cup applesauce
2 cups sugar
2 teaspoons cinnamon
1/2 teaspoon salt
1 teaspoon vanilla
2 cups flour
1 teaspoon baking soda
4 apples, peeled, cored and diced
1/4 cup buttermilk
Frosting:
1 (8 ounce) brick cream cheese
1/2 stick butter, at room temperature
1 teaspoon vanilla
3 1/2 cups powdered sugar
1 teaspoon cinnamon
Preparation:
1. Preheat oven to 350 degrees. Grease a 13x9 glass or metal cake pan.
2. Mix eggs and applesauce until creamy.
3. Add sugar and vanilla.
4. Sift flour, baking soda, salt, and cinnamon together. Gradually add to batter.
5. Beat in buttermilk.
6. Gently stir in apples.
7. Pour into prepared pan. Bake for 45-60 minutes. Bake time will vary depending on type of pan and how much liquid is in the apples. Bake until a toothpick comes out clean.
8. While cake is cooling, make frosting.
9. Beat cream cheese and butter until fluffy. Add vanilla.
10. Gradually add powdered sugar until consistency is right.
11. Add cinnamon and mix until well incorporated.
12. Frost cake.
